Scrambled Veg
About 15 mins to create
Ingredients: A splash of Oil (Sunflower or Olive Oil)
2-3 Medium Eggs
2 handfuls of Veggies of Choice (broccoli, finely sliced carrots, courgettes)
1 Pepper (red and yellow are sweeter than green)
3 rashers of Bacon or slices of Ham (optional)
Desired amount of Cheese of Choice (cheddar works well)
Half an Onion
Side salad (optional)
You Will Need: A fork
Small bowl or a glass
Frying pan
Chopping board
A sharp knife
Cheese grater (or slice cheese with knife)
Food Scissors (for meat, can use knife instead)
Recipe:
- Add a splash of oil to a frying pan and turn on medium high heat
- Break eggs into a bowl or glass and whisk with fork until yolk is evenly mixed with whites
- When the oil is sizzling, or s drop of water fizzes when splashed on the oil, add the eggs
- Cut up the ham or bacon into small sections and place in pan
- Chop the onion in half then into slices (leave chunky for texture and stronger taste)
- Chop the veg into small chunks
- Add onions and desired amount of veg to the pan (don't forget peppers!)
- Grate or slice cheese straight onto the mixture in the pan
- Give a stir with a spatula (flip over the egg to mix it with the veg)
- Turn down the heat to medium and allow to cook, stirring now and then
- After 5-10 minutes, it should all be ready! Serve with a side salad (optional)
