Leftover Menu: Potato Pizza

Using the main ingredients of a regular pizza, this dish is a twist on the classic margherita, but if you don't have the time to make an actual pizza from scratch, this is the perfect alternative recipe!

About 1 hour to create

Includes Bonus Recipe!

Ingredients:   Olive/Sunflower Oil 
                      One third of an Onion
                      3 Large Cooking Potatoes
                      1 Tray of Cherry Tomatoes
                      1 Large Mozzarella Ball

You Will Need: A medium sized Baking Dish 
                          Chopping Board
                          Large Knife

Recipe:
  1. Preheat the oven to 220 C
  2. Cover the bottom of the baking dish with olive or sunflower oil
  3. Slice potatoes into slim rounds (leaving the round potato ends, we will use them later)
  4. Place potato rounds in dish and cover with oil by hand (make sure to get both sides evenly)
  5. Leaving a centimetre off each end, chop the onion into thick slices - halve these for chunks
  6. Sprinkle the onion chunks over the potato rounds
  7. Chop all the tomatoes into quarters and sprinkle evenly over the potato 
  8. Chop the mozzarella into medium sized chunks directly over the dish, spreading evenly  
  9. Place dish on the middle shelf of the oven and allow to bake for 50 minutes
  10. Check dish is fully cooked by inserting a fork into the potato (it should go through with ease)

Bonus - The Leftover Leftovers!

Create whilst Main dish is baking

Ingredients:  Potato Ends
                     Onion Ends
                     4 Rashers Smoked Bacon
                         
You Will Need:  A Frying Pan
                           Spatula
                           Food Scissors (or use a knife)
Recipe: 
  1.  Add a splash of oil to frying pan
  2. Slice potato ends into about  1cm square chunks
  3. Slice onion ends into small pieces
  4. When a few drops of water will fizz on the oil, add the potato chunks and leftover onion
  5. Mix with spatula frequently 
  6. With food scissors or a knife, slice the bacon into small strips
  7. After about 15 minutes, or when the potato chunks are golden brown add bacon strips
  8. Continue to mix with spatula for several minutes, until the bacon is fully cooked (but not crispy)
  9. Serve with spatula, sprinkling over the main dish (Potato Pizza)
